Weekend Only Breakfast Recipes
We made two re-ea-ally good breakfasts this weekend. Put these on your agenda for next weekend. These recipes are both inspired by Annie at Annie's Eats.
Steel Cut Oats with Apple and Raisins
Usually oatmeal is just "meh" in my opinion, but we started using Bob's steel cut oats and they have moved to pretty good. This recipe calls for toasting the oats in a little butter before cooking and adds grated apple and raisins. Very creamy and very good. The whole process takes 40 minutes meaning this is weekend oatmeal. I usually like to reserve weekends for something more exciting than oatmeal, but for this recipe I will make an exception.
Cornmeal Chive Waffles with Salsa and Eggs
This may be my new favorite breakfast. Remember how I don't like breakfast carbs? Well make a savory waffle with chives and cornmeal, then top it with a fried egg and salsa (oh and we added a little cheddar cheese on top) and consider my opinions change-ed. Outstanding! Within the past few years I gained an appreciation for the runny egg yolk. I used to only like fully cooked yolk, but the flavor of the runny one is so much better. You just have to get past the idea of runny yolk and any salmonella fear. The cornmeal waffle is perfect for soaking it up. It is a little like cornbread in waffle form.

May need to try those waffles. Made Annie's chocolate coconut blondies yesterday. Haven't decided if they will be a repeat. And curvy carrots peanut butter chocolate chip cookies. Eli said they were pretty good:)
